Ennegayi is a brinjal curry popular in parts of Karnataka and Andhra Pradesh for its lovely nutty flavour. The gravy has a base of groundnuts & sesame seeds makes it rich in protein and calcium. Storage Instructions: Use a clean and dry spoon. Refrigerating it extends its shelf-life by another 3-6 months.
Ingredients: Coriander seeds, Jaggery, Turmeric, Tamarind, Red Chillies, Jeera, Hing, Peanuts, Coconut Powder, Salt, Dehydrated Onion, Sesame Seeds, Curry and Coriander Leaves.
- For 40g ( 3 Tbsps. approx. ) of this mix, add 100ml warm water and mix well. Your brinjal filling/Sabzi masala is ready. Slit 2-3 small brinjal and stuff the ready filling into it.
- In another clean pan, prepare the tempering of mustard, curry leaves and red chillies. Add the stuffed small brinjal/cut vegetables to it. After 2-3 mins of stir frying, add the remaining paste. Add little water on top to make the gravy.
- Cover and cook for about 8-10 mins or until the brinjal/vegetable turns soft.
- Enjoy with your choice rice or roti
Recommended: Sprinkle freshly chopped coriander leaves. Serves two.
